Valentine’s Day Muffins

The hubby’s and my Valentine’s Day rituals have simplified over the years.  He takes me out to dinner, and I make him these muffins.  I make muffins often, but I only make these for Valentine’s Day, so he really looks forward to them.

2 c. flour

1 c. mini chocolate chips

1/4 c. granulated sugar

1/4 c. packed brown sugar

2 t. baking powder

1/2 t. baking soda

1/2 t. salt

1 (10 oz.) jar maraschino cherries, chopped

3/4 c. milk

1/3 c. oil

1 egg, beaten

Combine milk, egg and oil in small bowl.  Set aside.

Combine flour, mini chocolate chips, granulated sugar, brown sugar, baking powder, baking soda and salt in large bowl.  Stir in chopped cherries.  Stir milk, oil and egg mixture into flour mixture just until moistened.

Spoon into greased or paper-lined muffin cups.

Bake in preheated 375 degree oven for 18-20 minutes or until brown.  Let cool five minutes and remove from pan.

YIELD: 1 dozen muffins
