Valentine Muffins

I have no idea when my Valentine will be home.  Such is the life of a railroader in bad weather.  But when he does, his favorite Valentine muffins will be ready for him.  Here’s the recipe, in case you are interested.  I would have made these anyway, but it is nice to feel productive during a blizzard and besides…the house smells GOOD!!

Cherry Chocolate Chip Muffins

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg, beaten
  • 1/2 cup semi-sweet mini chocolate chips
  • 1/2 cup drained, chopped maraschino cherries
  • 1/2 cup chopped pecans
  • 2 tsp. grated orange peel

Preparation –
In medium bowl, combine flour, sugar, baking powder and salt Add milk, oil and beaten egg. Stir just until blended. Stir in mini chocolates chips, cherries, pecans and grated orange peel. Spoon batter into paper-lined muffin cups, about 2/3 full . Bake at 400º’ for 25 to 30 minutes or until muffin tops are golden brown. Remove from pan and cool on a wire rack. Makes about 12 muffins.

These sound so good. I can use my imagination and almost smell them. I hope you and your honey have a Happy Valentine’s Day!

I wish the same for you and yours, Carol. And Ronda, you’ll have to let me know if you like the muffins.
