Food Mentioned Twice in a Day

My daughter is going to make Spaghetti Pie this week. That I knew. Then my friend Jackie, for whom the daughter has made Spaghetti Pie, asked me for the recipe. Since it got mentioned twice in a day, I thought the recipe was worth sharing.

SPAGHETTI PIE

6 oz. spaghetti (2 cups cooked)

2 T, butter or margarine

2 beaten eggs

1/3 c. grated Parmesan cheese.

1 c. (8 oz.) cream style cottage cheese

½-1lb. fresh mushrooms

½ c. chopped onion

½ c. chopped green pepper

1 8 oz. can cut-up tomatoes

1 6 oz. can tomato paste

1 t. sugar

1 t. oregano

½ t. garlic salt

½ c. shredded mozzarella

Cook spaghetti. Drain. Stir butter, eggs and Parmesan cheese into hot spaghetti. Form into a “crust” in a greased 10” pie plate. Spread with cottage cheese.

In skillet, cook mushrooms, onion and green peppers until tender. Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic salt. Spread tomato mixture in spaghetti crust on top of cottage cheese. Bake uncovered at 350 for 20 minutes. Sprinkle with mozzarella cheese and bake an additional five minutes or until cheese melts.
