We almost held to the plan this week! The Tuna Potato Supper was really good, and I will make it again. The Asparagus Ham Strata was passable, but I don’t think we’ll repeat it any time soon.
Monday: Grilled Cheese with a salad and pudding for dessert; it’ll be a busy day for the hubby at Habitat, and I don’t know when he’ll get home
Tuesday: Crab and Swiss Strata
Wednesday: Meat Loaf, finally! The recipe is on last week’s post. This got knocked back in our meal plan because we went to see the daughter for her birthday.
Thursday: Advent Soup Supper at church
Friday: Fajitas. The hubby is assembling these.
Saturday: Leftovers
Sunday: Baked Chicken. The hubby requested the recipe from Love Hunger: Recovery from Food Addiction.
Spicy Oven-Fried Chicken
4 chicken breast, boneless, skinned
1/2 c. skim milk
salt, pepper, paprika
1 c. bread crumbs
butter-flavored nonstick cooking spray
Preheat oven to 350. Put milk in a small mixing bowl. Put bread crumbs in another. Dip the chicken in milk. Without blotting the chicken, Sprinkle with spices and roll in the bread crumbs. Place chicken on a baking dish that has been sprayed with butter-flavored nonstick cooking spray. Now spray the chicken. Bake until chicken is golden brown, about 35 minutes at 350. Spray once during cooking time.
Serves 4.
